1 cup all-purpose flour ¾ cup granulated sugar ½ cup unsweetened cocoa powder 1 teaspoon baking soda ½ teaspoon baking powder ¼ teaspoon salt 2 large eggs ½ cup milk ¼ cup vegetable oil 1 teaspoon vanilla extract ½ cup hot water or hot coffee (for richer flavor)
Instructions
Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with liners. In a large bowl, whisk flour, sugar, cocoa powder, baking soda, baking powder, and salt. Add eggs, milk, oil, and vanilla. Mix until smooth. Carefully stir in the hot water or coffee, the batter will be thin, that’s normal. Pour evenly into cupcake liners (about 2/3 full). Bake for 18–20 minutes, or until a toothpick comes out clean. Cool for 5 minutes in the pan, then transfer to a wire rack. Frost if you want or eat as-is.
